Snails yachni , from Crete
If you visit Crete, you must try snails. Snails have a lot of protein and are a local produce of Crete. The Cretans have a variety of recipes for snails. They are eaten as an appetizer accompanied by raki, a traditional drink of Crete.
Recipe ingredients
- 50 snails
- 5 onions, finely chopped
- 1 clove of garlic melted
- 1 tbsp. tomato paste (diluted in a glass of water)
- ½ cup Red wine
- ½ cup olive oil
- 1 bay leaf
- 1 tbsp. red sweet pepper
- 1 pinch of ground cumin
- 2 cloves
- 1 cinnamon stick or ⅓ tsp ground
- 4 grains of allspice
- salt
- pepper
1. Clean the snails. Sauté the onion and garlic in oil in a saucepan on low heat. Once soften, add the snails, a little water and let them boil for about half an hour.
2. Then add the remaining ingredients and let them simmer for about forty-five minutes, stirring occasionally. Lower the temperature and continue cooking for about twenty more minutes, stirring constantly.
3. the snails are served hot.
